Dal Makhani is a famous North-Indian dish that is made from whole black lentils(Kala urad), red kidney beans (Rajma), butter and cream. The texture of this dal is very silky and it gets its richness from butter and cream hence the name dal Makhani. Slowly cooked lentils become very soft makkhan like along with Rajma. Ingredients and spices that need to be Prepare to make Dal Makhni:
- 1 cup whole black lentils
- Handful red kidney beans
- as required water for soaking and boiling
- For tadka
- 2 onions finely chopped
- 2 tbsp ginger garlic green chilli paste
- 2 tomatoes pureed
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 2 tsp Coriander powder
- 1 tsp garam masala powder
- 1 tsp cumin powder
- 1 tsp cumin seeds
- 1 bay leaf
- 2 tbsp oil
- 1 tbsp butter
- As needed salt
- As needed water for adjusting consistency
- As needed butter for garnishing
- As needed cream for garnishing
- Handful chopped coriander leaves
Steps to make to make Dal Makhni
- For Boiling lentils.
- Firstly, wash and soak together whole black lentils and red kidney beans for around 8-10 hours or overnight.
- Now pressure cook the dals by adding a bit of salt and water for 3-4 whistle on High flame and after that lower the flame and let the dal cook for 35-40 mins.
- For Tadka
- In a heavy bottom pan heat oil and butter. Now add cumin seeds let it crackle then add a bay leaf.
- Now add ginger garlic green chili paste and saute till the raw aroma of garlic disappears.
- Now add chopped onions and saute till it's golden brown in color.
- Now add tomato puree and mix well.
- Now add all the dry masalas - red chili powder, turmeric powder, coriander powder, cumin powder, and garam masala powder. Saute well till oil separates from the sides.
- Now add the cooked lentils and adjust both salt and water consistency.
- Cover and cook the dals for 10-15 mins.
- Now add coriander leaves from above and switch off the flame.
- Before serving add butter and cream.
- Serve hot with Jeera Rice or Butter Naan.
